Instant Pot Recipe Round-Up

Usually this time of year, I like to use our slow cooker, because there's something so cozy about putting everything into a single pot and letting it cook all day and allowing the smell to permeate throughout the house. However, after discovering I could make my Crockpot recipes at a fraction of the time and still have it come out tender and delicious, I was hooked on the Instant Pot. Seriously, why would I want to wait 8 hours for something to cook when I can do it in 1? Seems like a no-brainer to me. Here are some recipes I've tried and want to try:

...Hoping to make this soon: Pork Carnitas...

...This is Nick's favorite Instant Pot recipe. We make it with raw store-bought meatballs from our local grocery store and that cuts down on the cooking time: Instant Pot Spaghetti with Meatballs...

...I made this a few weeks ago and it was bomb: Olive Garden Zuppa Toscana Copycat...

...This is one of my favorites, but next time I think I will do lobster (pressure cook 4 mins from frozen + quick release) instead of shrimp: Instant Pot Shrimp Boil...

...Also, very good: Instant Pot Short Rib Ragu...

...I adapted this recipe for the pressure cooker by pressure cooking for 15 mins + quick release, then pressure cook pasta for 4 mins + quick release: Italian Meatball Soup...

...We made this today and loved it. The chicken was so tender and the sauce was delicious: Honey Teriyaki Drumsticks...

We have the 6Qt Instant Pot Ultra from Sur La Table. The two features that I love the most compared to the other models are:

  • There is an indicator on the display that shows where you are at in the cooking process (preheating, cooking, cooling/warming).
  • The vent is auto-sealing.
I don't think you can go wrong with any model, though. Bon Apetit!
